Kimchi Jjigae

A spicy Korean stew of kimchi, pork belly, and tofu — the older the kimchi, the deeper the flavor.

Preparation

  1. Cut 400 g pork into 1.5 cm chunks.
  2. Stir fry the pork.
  3. Slice 1 onion and 1 spring onion. Mince 6 cloves garlic.
  4. Add 500 g kimchi, onion, 1 tbsp soy sauce, 1 tbsp coarse red pepper powder, 0.5 tbsp fine red pepper powder, minced garlic, kimchi fluid and 5 dl water and bring to boil.
  5. Cut the 1 package tofu in bite-sized blocks.
  6. When the stew boils, add the spring onion and tofu.
  7. Lower the heat and let the stew simmer for about 20-30 minutes.
  8. Season with fish sauce, msg, and sugar if needed.
